Well, you can safely freeze most foods – but not all will still taste good.
雖然你可以安全地冷凍大多數食物,但並不是所有食物經過冷凍後的口感依然良好。
Vegetables and fruit with a high water content will go limp and mushy after defrosting. That’s because the water expands as it freezes, bursting the cell walls that give the plant its rigid texture.
水分含量高的蔬菜和水果在解凍後會變得軟塌塌、稀糊糊。這是因為水在結冰時會膨脹,從而導致賦予植物硬性結構的細胞壁發生破裂。
Mayonnaise and cream can separate and curdle.

They are emulsions that delicately bind together oil and water, which all fall apart after defrosting.

You can freeze cooked rice, but you’ll need to cool it down quickly first.

Bacterial spores on the rice could start multiplying and may cause food poisoning otherwise.

Whatever you freeze, it’s important to wrap it well. If it comes into contact with air, it starts to dehydrate over time in a process called sublimation and go leathery, change colour or shrivel.

It’s still safe to eat, but you might want to cut off those freezer-burnt bits first.
